Buffalo Mozzarella is a true Italian staple, and no pizza menu can claim to be truly authentic without featuring it somewhere! Our buffalo mozzarella – like all our other ingredients – was chosen after a lengthy consideration and testing period, and we finally selected one with true, Italian heritage and fantastic flavour.

No one is entirely sure how Asian water buffalo came to live in Italy, but there are two main schools of thought. The first is that they came over with the Goths during the migrations of the early medieval period, the other is that they were first introduced to Sicily by the Arabs and then brought from Sicily by the Normans in the year 1000. In any case, there have been water buffalo in Italy for over 1000 years now, with the earliest mention of buffalo milk cheese dating to the beginning of the 12th century.

Nowadays it is one of Italy’s biggest products, with the industry bringing in a staggering 300 million euros a year. 33,000 tonnes of it is produced annually, with only 16% of it being sold abroad. Purists will tell you truly authentic buffalo mozzarella must come from Campania, but after contaminated water led to traces of dioxine being found in buffalo milk, we decided to source our “pearl of the table” elsewhere.

And we are glad we did! Otherwise we may never have discovered the gem that is Favella. This family-run farm in Calabria has been producing high-quality milk since the 1930s. Established in 1932, as part of Italy’s post-great-war agricultural modernisation, the farm began producing dairy products which were good enough to be sold to the international market. Over the years, the farm expanded and improved and in 1970 they were awarded a gold medal by the Ministry of Agriculture for the superior breeding of dairy animals.

Their herd – which now numbers nearly 1000 water buffalo – grazes on the Piana di Sibari, near the site of the ancient city of Sybaris. When not grazing, the buffalo are fed almost exclusively with produce from the farm, where all milk processing takes place as well.

12 litres of premium buffalo milk from the Favella farm go into each kilo of mozzarella, creating a rich, elastic cheese, exquisitely creamy with a delicate sweetness. Most importantly - it is wonderful on pizza!
