Bufala all' glera

Called a “drunken cheese”, Buffala all’ glera belongs to a tradition of cheeses from the Veneto which draw flavour from one of the region’s top products: Prosecco. This semi-hard buffalo cheese is bathed in Prosecco before the rind is coated in vinaccia di prosecco – the marc or must left over once the wine is extracted. This collection of glera grape skins, seeds, and residue imparts a fruity sweetness, with grappa-like undertones, to the cheese as it ages.


 This traditional pork salume is made from the muscle which runs from the neck to the fourth or fifth rib of the pork shoulder. This ham is dry cured and sliced very thin – similar to a non-brined Prosciutto. The process itself is very similar to bresaola – the meat is seasoned with red wine, garlic, herbs and spices, rubbed with salt and stuffed into natural casing before being hung up to cure. Madeo coat the exterior of their ham with a Calabrian chilli-spiced cream, before aging it for 100 days.

Our delightful crispy pancetta is a specific kind known as pancetta arrotolata (“rolled pancetta”) made from salted and rolled pork belly meat. Ours comes from a small producer in the town of San Demetrio Corone in the southern Italian region of Calabria.

This artisan salami is produced in the town of Spilimbergo, in Northern Italy. The finest cuts of pork are chosen, trimmed, and hand-cut with a very special knife (or “coltello”, hence the name). The sausage is then stuffed into natural casings, tied by hand, and left to mature for 60 days on wooden poles. Only experts know how to create the perfect balance of pink and white, fat and lean meat and so it is only produced in very limited qualities. We suggest you give it a go!
